Coquus is a tiny project in Itata, Chile, started by Adrian Parada Arrau. He's a former chef and makes this 100% Cinsault from a 46-year old dry-farmed vineyard. This wine has so much soul and energy in the glass—if you seek out ethereal, crunchy Pinot Noir, this one's for you.
