Boutari Kallisti 2007

Boutari Kallisti is the top-ranking version of the Αssyrtiko variety in a barrel. Having recognized the potential of the Αssyrtiko variety, various new vinification methods were applied, in yet another pioneering effort. The result is a magnificent aged white with a complex character.

VINIFICATION:
Classic white vinification.

LENGTH AND TYPE OF AGEING:
7 months in oak barrels (3-7 months in bottle)

AEGING POTENTIAL:
7-10 years

CHARACTERISTICS:
Brilliant yellow colour, complex ageing aromas (wood, hazelnut, smoke and vanilla), that blend harmoniously with the fruity aromas of this variety (apple and peach). Rich, fatty, round, with an excellent structure, a metal tinge and an intense aromatic aftertaste.

FOOD PAIRING:
Shellfish, cooked fish and high in fat cheeses. Served at 10-12°C.
