Soil of granitic origin.\u003c\/p\u003e\n\u003cp\u003eGrapes were harvested on September 1st. Foot treading of the grapes was carried out in 1000-liter vats, and later placed in old chestnut wood barrels, with about 30% of stems, where alcoholic fermentation took place for 12 days. Two completely manual daily punch-downs were performed, and the wine was extracted by gravity. The wine underwent malolactic fermentation in stainless steel tanks and aging in used French oak barrels. This is a wine for which no mechanical processes were used throughout its winemaking and aging.
