Tasting Notes
Our Cabernet Sauvignon is truly a classic in style, with a rich aroma, up-front cassis, tobacco and pencil lead on the nose. Delicious rich plumb and chocolate, are structured by firm, yet restrained tannins, which make way for an elegant finish.
Harvest and Winemaking Information
The grapes are sourced form 8 different blocks on the farm, which were handpicked and carefully vinified separately. The grapes were fermented for 7 days, and then the crushed grapes and skins are left to macerate for at least a month. The must is then pressed and moved to 30% new French oak and 70% second fill French oak for 18 months.
This vibrant Cabernet displays aromas of plum and cassis with a subtle hint of mint. Luscious dark berry and cassis flavors are complemented by notes of dark chocolate, coffee and cedar, backed by refined tannins.
