While Australia makes some of the finest Cabernet Sauvignon in the world bar none, it is also one of the most ubiquitous grapes in the fine wine world. It’s not that we avoided or didn’t like Cabernet Sauvignon, it’s just that it’s the grape that gets most abused and possibly shows the worst characteristics when not made properly. So to us, it was a bit of an evil grape. And, we were a little inspired by Miles Davis. At its best Cabernet can be juicy and explosive and full of ripe black fruits while retaining hints of the inherent savory nature of the grape.
