Located in the Médoc, just north of St.-Estephe, the 32 acres of vineyards of Chateau Les Moines are located on a strip of Eocene limestone called "Calcaires of Couquêques", composed of particularly rich filtering and fossilized shells. Average vine age is over 25 years, with the mix being 75% Cabernet Sauvignon and 25% Merlot. Soft-pressing through a long cuvaison and cold-fermentation result in a particularly rich wine, which is then matured in oak casks for 18 months.
